Poppy Seed Chicken

This recipe is a family favorite. Growing up, one of my best friend’s mom would make this and I loved it. Matt and I eat this on a regular basis now, so I figured I would write a blog post on it. Thank you Jo Ellen for letting me share this wonderful recipe!

What you’ll need:

  • 1 small casserole dish (I used a pie pan because baseball life)
  • 1 medium saucepan
  • 3 chicken breast
  • 1 can Cream of Chicken soup
  • 8 oz. Greek Yogurt OR Sour Cream
  • 2 tbsp Poppy Seeds
  • 1/4 cup of butter
  • 1 sleeve Ritz Crackers (I used whole wheat but regular is better!)

To Make:

1. Preheat oven to 350 degrees
2.Cook 3 cups of diced chicken in covered saucepan over medium heat
3. Once chicken is cooked, place into greased casserole dish
4. Add Cream of Chicken Soup and Greek yogurt into dish with chicken and mix together
5. Add 2 tbsp of poppy seeds (I usually don’t measure)
6. Melt butter in microwave.
7. Crush Ritz Crackers up in small bowl and add melted butter.
8. Spread buttery cracker mix over the top of chicken mixture.
9. Bake at 350 degrees until mixture is bubbly and top is golden brown
