Healthy Chipotle Bowl

This recipe is a favorite in the Reynolds household. Whenever we are in the mood for Chipotle but want a healthier version of it, I make this for us. It’s so simple, but there are little things to add that make a big flavor diffierence.

What you’ll need:

1 package of lean ground turkey meat

1 package of Green Giant Cauliflower Rice (Costco members, they sell cauliflower rice in bags of 4 FYI and they are better than Green giant!)

1 tbsp minced garlic

1 tbsp Oil

1/2 small onion [chopped]

1 cup spinach [chopped]

1/2 can Original Rotel

1/2 can reduced sodium black beans

1/2 can whole kernel corn

1 package 25% Less Sodium Taco Seasoning Mix

Toppings:

Orginal Greek Yogurt (for sour cream)

Cheddar Cheese

Avocado

Salsa

Chips

To cook:

•In a large saucepan heat small chopped onion, 1 tablespoon of oil and 1 tablespoon of minced garlic on medium heat. Cook until onions are browned.

•Place entire bag of cauliflower rice in a separate large saucepan but don’t turn it on yet. Green Giant comes frozen and doesn’t need long to heat up. If you are using the Costco brand, just heat it in the microwave 5 minutes before serving the dish.

•Place raw turkey meat into skillet with browned onions, garlic, and oil. Separate with spatula and cook ground turkey meat all the way through.

•When there is no pink left, add packet of Low Sodium Old El Paso taco seasoning to skillet along with 2/3 cup of water. Add red pepper here too if you like it a little spicy like we do 🙂

•This next step is one that adds more flavor like I said earlier. YUM! Turn on skillet of cauliflower rice at this time and add 1 spoonful of butter, 1/2 of a limes juice, cilantro, and pink salt (OMIT for a healthier option but I Can’t Believe It’s Not Butter is the way to go)

•Drain and rinse beans and corn. Add half a can of each to the turkey skillet. Add 1/2 a can of rotel as well. I drain a little liquid out of the Rotel but not all of it.

•Bring to a simmer for 5 minutes while stirring occasionally

•Taste cauliflower rice for desired temp and taste.

And just like that you’re done! Add cauliflower to bottom of bowl, top with ground turkey mixture and toppings of choice. We add cheese, advocado, low-fat Greek yogurt (tastes just like sour cream),  salsa, and chopped spinach. Oh and healthy-ish chips on the side!
