Taco pasta is the easiest and I mean EASIEST recipe I think I have ever made and was such a hit! This pasta is essentially like Italian and Mexican food had a baby. I did a healthier spin on it (because thats where I find the fun in cooking), so I wanted to share. In my opinion this is the ideal dinner when you’re looking for something quick and easy.
What you’ll need:
- 1 large pot
- 1 large frying pan
- colander
Ingredients (feeds 4):
- 1/2 a box of BANZA shell pasta
- 1/2 a box of Barilla medium shells
- 1 taco seasoning package (Taco Bell brand is the best)
- 1 lb of bison (lean ground turkey works too)
- 1 cup of jarred salsa
- 1/2 cup of water
- 1 medium onion finely chopped
- 1 TBSP of minced garlic
- 1 TBSP of avocado oil
- 1 TSP of crushed red pepper
- 1 cup of cheddar cheese
- Taco Bell Hot Sauce
- Simply Organic White Cheddar Doritos
Recipe:
- Place avocado oil and onion in large frying pan on medium heat until onions are translucent/slightly brown
- While onions are cooking, boil water in a separate large pot for pasta. Add Banza pasta first and let cook for 5 min (it takes longer to cook than the Barilla pasta)
- Add bison to frying pan with onions and cook thoroughly until there is no pink left. Then stir in garlic, taco seasoning mix, 1/2 cup of water and salsa. Turn down to simmer and cover
- Add Barilla pasta to boiling water with the Banza pasta and cook for 3-4 minutes stirring occasionally until all noodles are al dente.
- Drain water from noodles using a colander, then add back to the large pot. Pour bison mixture into the large pot
- Add cheese and crushed red pepper. Stir gently until cheese is melted.
- Top with Taco Bell Hot Sauce, tortilla chips, and enjoy!
